A cozy dish combining chicken, cheese, and ranch seasoning into a creamy soup that’s simple to make.

Ingredients

  • 2-3 cups Shredded Chicken
  • 6 slices Thick-Cut Bacon
  • 1 packet Ranch Seasoning Mix
  • 8 oz Cream Cheese, softened
  • 1-2 cups Shredded Cheddar Cheese
  • 4 cups Chicken Broth
  • 1 Onion, diced
  • 3 cloves Garlic, minced
  • 1-2 cups Diced Potatoes (Yukon Gold or red), optional
  • 1 cup Frozen Corn, optional
  • Green Onions or Chives for garnish, optional

Instructions

  1. Cook the bacon over medium heat until crispy. Remove and drain on paper towels, reserving some fat.
  2. Sauté the onion in the bacon fat for 5-7 minutes, then add garlic and cook for another minute.
  3. Pour in chicken broth, scraping the pot to loosen browned bits. Stir in ranch seasoning. Add potatoes if using, and simmer for 10-15 minutes until tender.
  4. Add cream cheese, stirring until melted and smooth.
  5. Incorporate shredded chicken and cheddar cheese, mixing until melted. Add frozen corn if using, and heat through.
  6. Taste and adjust seasonings before serving, garnishing with bacon and green onions.

Notes

Use rotisserie chicken for convenience and consider different vegetables or proteins for customization.
