A classic Chicken Pot Pie featuring a flaky crust and savory filling of tender chicken and hearty vegetables, perfect for chilly evenings.

Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup frozen peas
  • 1/2 cup onion, chopped
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup milk
  • Salt and pepper, to taste
  • 1 teaspoon dried thyme or rosemary (optional)
  • 1 package store-bought pie crusts (or make your own)
  • 1 egg (for egg wash, optional)

Instructions

  1. Preheat the Oven: Start by preheating your oven to 425°F (220°C) to prepare for baking.
  2. Sauté Vegetables: In a large skillet, melt the butter over medium heat. Add the chopped onion, diced carrots, and celery. Cook until the vegetables soften, about 5-7 minutes.
  3. Make the Sauce: Sprinkle the flour over the sautéed vegetables and stir until the flour is well combined. Gradually whisk in the chicken broth and milk, ensuring there are no lumps. Continue stirring until the mixture thickens, about 3-5 minutes.
  4. Add Chicken and Seasoning: Stir in the cooked chicken, frozen peas, salt, pepper, and thyme if using. Remove the skillet from heat and let it cool slightly.
  5. Prepare the Crust: Roll out one pie crust into your pie dish. Pour the chicken filling into the crust, spreading it evenly.
  6. Top with Crust: Place the second pie crust over the filling. Crimp the edges to seal and cut a few slits in the top to allow steam to escape. If desired, brush the crust with a beaten egg for a golden finish.
  7. Bake: Place the pie in the preheated oven and bake for 30-35 minutes, or until the crust is golden brown.
  8. Cool and Serve: Let the pie cool for about 10 minutes before slicing. This allows the filling to set.

Notes

Use leftover chicken for added flavor and time savings. Don’t overcook the vegetables as they will soften while baking.
