A flavorful and easy weeknight meal featuring chicken, potatoes, and carrots, all cooked in one pan for minimal cleanup.

Ingredients

  • 4 chicken thighs or breasts
  • 4 medium potatoes, diced
  • 2 cups carrots, sliced
  • 1 onion, sliced
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • Salt and pepper to taste
  • Fresh herbs (like thyme or rosemary) for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Combine chicken, potatoes, carrots, and onion in a large mixing bowl. Drizzle with olive oil, sprinkle in garlic powder, salt, and pepper, and toss well.
  3. Spread the mixture in a single layer on a baking sheet.
  4. Roast in the oven for about 30-35 minutes, until chicken reaches an internal temperature of 165°F (74°C) and vegetables are tender.
  5. Garnish with fresh herbs before serving.

Notes

Cut the potatoes and carrots into similar sizes for even cooking. Let the chicken rest after roasting to lock in juices.
