Ingredients

  • 4 chicken thighs (bone-in and skin-on)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups mashed potatoes (prepared with butter and cream, if desired)
  • 2 cups roasted vegetables (such as carrots, broccoli, and bell peppers)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Whisk together olive oil, garlic powder, paprika, salt, and pepper.
  3. Rub the seasoning mixture all over the chicken thighs.
  4. Arrange the chicken thighs on a baking sheet lined with parchment paper.
  5. Bake for 35-40 minutes until cooked through and crispy.
  6. Prepare your mashed potatoes and roast your vegetables during the last 20 minutes of the chicken’s cooking time.
