A delightful dessert combining rich chocolate brownies topped with creamy pumpkin cheesecake, perfect for fall gatherings.

Ingredients

  • ½ cup canned pumpkin
  • 1 teaspoon cinnamon
  • ½ teaspoon ginger
  • ¼ teaspoon nutmeg
  • ½ teaspoon salt (divided)
  • 8 ounces mascarpone cheese
  • 8 ounces cream cheese
  • ¾ cup sugar
  • 2 tablespoons flour
  • 1 tablespoon vanilla extract
  • 2 large egg yolks
  • ½ cup flour
  • ½ cup unsweetened cocoa powder
  • ¼ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup butter (melted)
  • ¾ cup sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ½ cup chocolate chips

Instructions

  1. Mix ingredients: In a medium bowl, combine the canned pumpkin, cinnamon, ginger, nutmeg, and ½ teaspoon of salt. Mix until well blended.
  2. Combine cream cheeses: In a separate large bowl, blend mascarpone cheese and cream cheese until smooth.
  3. Add sugar and flour: Mix in the sugar, flour, vanilla extract, and egg yolks until fully combined.
  4. Incorporate pumpkin: Gently fold the pumpkin mixture into the cream cheese mixture. Set aside.
  5. Preheat oven: Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper for easy removal.
  6. Combine dry ingredients: In a bowl, whisk together flour, cocoa powder, baking powder, and ½ teaspoon of salt.
  7. Mix wet ingredients: In another bowl, combine melted butter, sugar, eggs, and vanilla extract. Whisk until blended.
  8. Combine mixtures: Gradually add the dry ingredients to the wet mixture and stir until just combined. Fold in the chocolate chips.
  9. Layer the brownie batter: Pour half of the brownie batter into the prepared pan and spread evenly.
