A classic roast chicken dish paired with flavorful vegetables, easy to prepare and perfect for any occasion.

Ingredients

  • 1 whole chicken (3-4 lbs)
  • Salt
  • Black pepper
  • Olive oil
  • 1 lemon, halved
  • 1 head of garlic, halved
  • Fresh thyme
  • Carrots, chopped
  • Potatoes, chopped
  • Onions, quartered
  • Chicken broth (optional, for gravy)

Instructions

  1. Preheat your oven to 425°F (220°C) to ensure a crispy skin.
  2. Pat the chicken dry with paper towels to help the skin crisp up. Place it in a roasting pan.
  3. Season the inside of the chicken with salt and pepper. Stuff it with the halved lemon, garlic, and sprigs of thyme for enhanced flavors.
  4. Rub the skin of the chicken with olive oil and season generously with salt and pepper to enhance the flavor and browning.
  5. Arrange the chopped carrots, potatoes, and quartered onions around the chicken in the pan.
  6. Roast the chicken for about 75 minutes or until the internal temperature reaches 165°F (75°C).
  7. Let the chicken rest for 15 minutes after removing it from the oven.
  8. Carve the chicken and serve it with the roasted vegetables and drippings.

Notes

Make sure to dry the chicken well before seasoning to create a crispy skin. Use a meat thermometer to check doneness.
