Ingredients
2 cups cooked turkey, shredded
1 cup carrots, diced
1 cup peas
1 cup potato, diced
1 cup celery, diced
1 small onion, diced
2 cloves garlic, minced
1 teaspoon thyme (dried or fresh)
Salt and pepper to taste
4 tablespoons butter
1/4 cup all-purpose flour
2 cups chicken broth
1/2 cup milk (or a dairy-free substitute)
1 store-bought pie crust or homemade pie dough
1 egg, beaten for egg wash (optional)
Instructions
Prepare the Sauce: In a saucepan, melt the butter over medium heat. Add the diced onion and garlic, cooking until softened, about 3-4 minutes.
Make the Roux: Sprinkle the flour over the onion mixture, stirring constantly for about 1 minute to create a roux.
Add the Broth: Gradually whisk in the chicken broth, followed by the milk. Cook, stirring frequently until the mixture thickens and bubbles, about 5-7 minutes.
Combine the Filling: Remove the sauce from heat and stir in the turkey, carrots, peas, potatoes, celery, thyme, salt, and pepper. Mix well to combine all ingredients.
Prepare the Pie Crust: Preheat your oven to 425°F (220°C). Roll out the pie crust if using homemade dough. Place it in a pie dish, pressing gently to fit.
Add the Filling and Top: Pour the turkey filling into the pie crust, spreading it evenly. Cover with the top crust, sealing the edges. Cut a few slits in the top to allow steam to escape. Brush with the beaten egg for a golden finish if desired.
Bake the Pie: Place the pot pie in the preheated oven and bake for 30-35 minutes, or until the crust is golden brown and the filling is bubbling.
Cool and Serve: Allow the pot pie to cool for 10 minutes before serving. Enjoy this warm comforting dish!
Notes
Use moist, flavorful turkey for best results. Be generous with seasoning to enhance flavor.
