A comforting and creamy chicken casserole topped with crunchy crackers, perfect for family meals.

Ingredients

  • 4 cups cooked, cubed chicken
  • 1 cup finely diced celery
  • 8 ounces Colby jack or cheddar cheese, shredded
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 30 Ritz crackers, crushed
  • 2 tablespoons butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the mayonnaise, sour cream, thyme, salt, pepper, garlic powder, and onion powder in a large bowl.
  3. Add the cubed chicken, diced celery, and shredded cheese to the bowl. Stir gently until thoroughly combined.
  4. Lightly spray a 1-quart baking dish with cooking spray and spoon the chicken mixture into the dish, spreading it evenly.
  5. Combine the crushed Ritz crackers and melted butter in a separate bowl.
  6. Sprinkle the buttered cracker crumbs evenly over the chicken mixture.
  7. Bake in the preheated oven for 30 minutes, or until bubbly and the topping is golden brown.

Notes

Use cooked chicken for quick prep. Substitute Greek yogurt for sour cream if desired.
