Ingredients

  • 2 cups rice (preferably long-grain)
  • 4 cups chicken broth (low-sodium recommended)
  • 1 pound chicken breasts (boneless and skinless)
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • 1 cup frozen peas (optional)

Instructions

  1. Prepare the chicken: Lay the chicken breasts at the bottom of the slow cooker.
  2. Add aromatics: Scatter the chopped onion and minced garlic over the chicken.
  3. Mix rice and broth: In a bowl, combine the rice, chicken broth, salt, pepper, and paprika. Stir well, then pour over the chicken.
  4. Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours until tender.
  5. Add peas and cheese: About 30 minutes before serving, stir in frozen peas and cheese.
  6. Serve: Once melted, stir gently and serve warm.

Notes

Use long-grain rice for better texture. You can customize spices and add vegetables according to preference.
