A comforting and hearty beef stew made easy in a slow cooker, perfect for busy weeknights.

Ingredients

  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 4 medium carrots, sliced
  • 3 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 2 tablespoons olive oil (for browning)
  • 2 tablespoons corn starch (optional, for thickening)

Instructions

  1. Brown the beef: Heat the olive oil in a skillet over medium-high heat. Add the beef cubes and brown them on all sides.
  2. Prepare the vegetables: Chop the carrots, potatoes, and onion. Mince the garlic.
  3. Load the slow cooker: In your slow cooker, add the browned beef, potatoes, carrots, onion, and garlic.
  4. Mix the broth: In a separate bowl, combine the beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper. Stir well to mix everything, then pour it over the beef and vegetables in the slow cooker.
  5. Cook low and slow: Cover and cook on low for 8 hours or on high for 4 hours. Check for doneness.
  6. Optional thickening: If you prefer a thicker stew, combine cornstarch with an equal amount of cold water to make a slurry. Stir it into the stew during the last 30 minutes of cooking.

Notes

Use good quality beef for a rich flavor. You can substitute vegetables based on your preference.
