A cozy, comforting one-pot meal combining tender chicken, flavorful rice, and melty cheese, perfect for busy weeknights.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup rice (white or brown)
  • 2 cups chicken broth
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon paprika

Instructions

  1. Prepare the chicken: Place the chicken breasts at the bottom of the slow cooker.
  2. Add the rice: Rinse the rice under cold water, then add it on top of the chicken.
  3. Pour in the broth: Carefully pour the chicken broth over the rice.
  4. Season it up: Add the chopped onion, minced garlic, salt, pepper, and paprika.
  5. Cook low and slow: Cover and cook on low for 4-6 hours or until the chicken is fully cooked and tender.
  6. Add the cheese: About 30 minutes before serving, stir in the shredded cheese until melted.

Notes

Rinsing the rice before adding it helps prevent it from becoming overly sticky. Substitute chicken with turkey or tofu for different flavors.
