Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 8 ounces egg noodles
  • 2 cups spinach
  • Juice of 1 lemon

Instructions

  1. Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced carrots, and sliced celery. Cook until the vegetables have softened, about 5-7 minutes.
  2. Add garlic: Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Simmer the broth: Pour in the chicken broth and bring it to a simmer. Allow it to cook for about 5 minutes.
  4. Incorporate chicken and herbs: Add the shredded cooked chicken, dried thyme, dried oregano, salt, and pepper. Stir to combine.
  5. Cook the noodles: Stir in the egg noodles and cook according to package instructions until al dente.
  6. Finish with spinach and lemon: Add the spinach and lemon juice just before serving, allowing the spinach to wilt slightly.
  7. Taste and adjust: Taste the soup and adjust the seasoning if necessary, then serve hot.

Notes

For a heartier soup, consider adding potatoes or corn. Use a rotisserie chicken for added flavor and convenience.
