Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix wet ingredients in a large bowl until smooth.
  3. Combine dry ingredients in another bowl until evenly distributed.
  4. Add dry ingredients to the wet mixture, stirring gently.
  5. Fold in any optional ingredients like nuts or chocolate chips.
  6. Fill muffin tins about two-thirds full with batter.
  7. Bake for 18-20 minutes until a toothpick comes out clean.
  8. Cool in the pan for 5 minutes before transferring to a wire rack.
