Ingredients
1 ½ cups cookie crumbs
½ cup unsalted butter, melted
16 oz cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla extract
1 cup heavy cream
1 tablespoon unflavored gelatin
1 package of Jell-O (red or pink)
½ cup raspberry sauce
Instructions
Prepare the Pan: Preheat your oven to 350°F (175°C). Prepare a springform pan by greasing the sides and lining the bottom with parchment paper if desired.
Make the Crust: In a bowl, combine the cookie crumbs with the melted butter. Mix until the crumbs are evenly moistened, then press into the bottom of the springform pan. Bake for 5 minutes and let cool.
Mix the Filling: In a large mixing bowl, beat the softened cream cheese, sugar, and vanilla extract together until smooth and creamy, about 3-4 minutes.
Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. Fold this whipped cream into the cream cheese mixture gently.
Pour the Filling: Spread the cream cheese filling over the cooled crust, smooth the top, and refrigerate for at least 2-3 hours or until firm.
Prepare the Jell-O: While the cheesecake chills, make the Jell-O according to the package instructions. Allow it to cool at room temperature until slightly thickened.
Create Brain Effect: Pour the slightly thickened Jell-O over the cheesecake in a brain design. Return to the refrigerator for another hour to set completely.
Serve: Drizzle raspberry sauce on top just before serving. Chill until ready to serve.
